CHÂTEAU CHEVAL BLANC

The name Cheval Blanc was first used in 1852, 20 years after the founding of the 39 hectare estate in Saint-Emilion in 1832. The domaine has a long history, with archives indicating that vines have been grown at Cheval Blanc, date as far back as the 15thcentury. The ethos in the vineyard is minimal intervention with limited use of fertilizers and no chemical herbicides.

Grapes are harvested entirely by hand at Cheval Blanc and only picked when they have reached the exact desired degree of maturity. Pruning and green-harvesting limit the crop to five or six bunches per vine so that the vines focus their energy on producing high quality fruit. The harvest takes place according to the ripeness of each grape variety in each plot. The grapes from each plot are processed separately – no grapes from one plot are mixed with ones from another. Grape selection occurs both before and after destemming and less than 5% of the grapes are left whole and less than 5% are crushed.



The average age of vines is over 40 years, and density is high at around 8,000 vines per hectare. Cabernet Franc accounts for 58% of plantings and Merlot 42%, which adds richness and roundness to the blend. The château is most famous for its Cabernet Franc vines, and some of these date from the 1920’s. This grape offers complex and elegant aromatics and freshness to the finish on the palate.
