Ce texte anonyme est attribué à Menon. Tout en indiquant “ne pas avoir suivi les livres des derniers écrivains sur la cuisine, qui en parlant de chaque aliment, indiquent et décident de ceux qui sont bons ou mauvais pour la santé ; cela n’est bon qu’à intimider des malades imaginaires, dont le nombre n’est déjà que trop grand”.
Le style est simple et clair, et s’adresse aux cuisiniers “novices”, plutôt qu’à "ces grands officiers qui ont l’honneur de servir les tables des princes”. L’auteur en profite d’ailleurs pour demander à ses lecteurs de lui pardonner “les fautes de François que je puis avoir fait, […] étant sans étude et sans connoissance de Belles-Lettres".
L’ouvrage est divisé en 10 chapitres, abordant tour à tour les tables et le service, les viandes (découpe, jus, ragoûts, sauces, farces), confitures, desserts, poissons (dont certains représentés par des gravures sur bois), pâtisseries, œufs et légumes. Illustré de 4 planches dépliantes dans le t.I, représentant des tables, de 5 à 25 plats, une dizaine de bois in-texte (quelques réparations au verso des planches, petite déchirure en marge de la dernière, piqûres et rousseurs, manque le faux-titre du tome I). Reliure de l’époque : veau marbré, dos à nerfs, caissons ornés, pièces de titre de maroquin rouge et tomaisons de maroquin citron, gardes de papier marbré, tranches rouges (restaurations aux coiffes, charnières et coins).

First of all, you should register to be able to purchase at auction. The results of the auction are published within a few days after the end of the auction. In the top menu of the site, find the tab "Auctions". Click on it and you will be on the auction catalog page, where you can easily find the category "Results". After opening it, select the desired auction from the list, enter and view the current status of the interested lot.
The information about the auction winners is confidential. The auction winner will receive a direct notification from the auction house responsible with instructions for further action: an invoice for payment and the manner in which the goods will be received.
Each of the auction houses has its own payment policy for the won lots. All auction houses accept bank transfers, most of them accept credit card payments. In the near future you will find detailed information for each case in the section "Auction information" on the page of the auction catalog and the lot.
Shipment of the won lot depends on its size. Small items can be delivered by post. Larger lots are sent by courier. Employees of the auction houses will offer you a wide range to choose from.
