La diététique par le grand-père du prédicateur Savonarole : édition originale, en italien. Professeur à l'université de Padoue, il est nommé médecin de la cour des Este, à Ferrare, en 1440. Cette nomination modifie en profondeur la manière de travailler de Savonarole et les visées de ses écrits. Là où, à Padoue, il pratiquait une médecine "technique", à destination de spécialistes et de lettrés, compilant des idées et observations trouvées chez Avicenne, Aristote ou HIppocrate ; lorsqu'il rejoint la maison d'Este, à 55 ans, il s'adresse également à un lectorat de non spécialistes. Il publie alors autant en latin qu'en langue vernaculaire. En plus de ses traités médicaux, il signe également quelques textes consacrés à la politique, à la morale ou encore à la diététique, comme ici. Dans son De tutte le cose che se manzano, paru de manière posthume, il décrit les aliments, leurs propriétés, leurs vertus et leurs inconvénients - céréales, viandes, poissons, fuits, légumes, eau, miel et alcools divers.
