Cuisinier-confiseur, Nicolas Appert est l'inventeur, en 1795, de la boîte de conserve et du procédé de stérilisation des aliments par la chaleur à l'abri de l'air, cinquante ans avant les travaux de Pasteur. En 1802, il avait installé à Massy, avec une cinquantaine d'ouvriers, la première usine de conserves au monde. Renonçant à prendre un brevet, Appert publie L'Art de conserver et divulgue la technique de l'"appertisation", que le Gouvernement impérial couronna d'un prix de 12 000 francs. Honoré du titre de "bienfaiteur de l'humanité" par les Anglais, il meurt ruiné et son corps est jeté à la fosse commune.
La seconde partie de l'ouvrage donne de nombreuses recettes destinées à la conservation : potages (il est aussi l'inventeur du bouillon en cubes), légumes, sauces, fruits, viandes… Bel exemplaire, revêtu de la signature autographe d'Appert au verso du faux titre. En français dans le texte, 1990, 220 ; Vicaire, 34 ; Cagle, 34 ; Oberlé, Fastes, 184 ("extrêmement rare").

Non rogné, sous couverture d’attente (quelques piqûres et rousseurs éparses, légers reports de la signature). Emboîtage de Loutrel.
First edition, untrimmed, as issued, of Appert's landmark work on the preservation of food by canning, forerunning Pasteur's discoveries. This 1810 publication was the first book to explain the principle of canning. Appert chose not to patent it, and did not financially profit from his discoveries.

The results of the auction are published within a few days after the end of the auction. In the top menu of the site, find the tab "Auctions". Click on it and you will be on the auction catalog page, where you can easily find the category "Results". After opening it, select the desired auction from the list, enter and view the current status of the interested lot.
The information about the auction winners is confidential. The auction winner will receive a direct notification from the auction house responsible with instructions for further action: an invoice for payment and the manner in which the goods will be received.
Each of the auction houses has its own payment policy for the won lots. All auction houses accept bank transfers, most of them accept credit card payments. Shipment of the won lot depends on its size. Small items can be delivered by post. Larger lots are sent by courier. Employees of the auction houses will offer you a wide range to choose from.
