On ignore l’auteur de cet ouvrage, qui a parfois été attribué à Francesco Maria Vialardi, Tommaso Buoni ou Pietro Strozzi. Oberlé en souligne l’importance : « Ce livre intéresse au plus haut point la gastronomie, l’art de la table, les femmes et les mœurs en général. […] Toutes ces dissertations, révélatrices des mœurs du temps, n’ont qu’un seul propos : épargner ». La Continuation, la Nouvelle consulte et les Notables avertissements ont tous une page de titre séparée, mais des signatures et une pagination continues.
