Édition originale de cet ouvrage dans lequel Menon prône l’office moderne. Bel exemplaire en veau de l’époque.



Ce traité fait suite au Maître d’hôtel cuisinier, paru l’année précédente. S'adressant à des maîtres d'hôtel et à des officiers exigeants qui ne sauraient s'accommoder de l'ouvrage de Massialot, qui remontait à 1691 (« Quels changements n'a-t-on pas vu ? »), Menon présente plus de 600 recettes de confiserie, proposées au fil des saisons et précédées d'observations sur la variété des fruits, leurs qualités gustatives et diététiques, marmelades, confitures, glaces, mousses, crèmes, ratafias, biscuits, sirops, conserves. L'aspect décoratif des tables, dressées comme des jardins, y est développé. Livres en bouche, 209 ; Vicaire, 590 ; Cagle, 342 ; Bitting, 320.



In-12 (161 x 98 mm). Illustré de 5 planches dépliantes hors-texte gravées en taille-douce par L. Le Grand, dont trois représentent des décors de table (tache marginale aux ff. E7 et E8). Reliure de l’époque : veau marbré, dos à cinq nerfs orné, tranches rouges (mors partiellement fendus).
