192 x 156mm. c.65 written pages, in several 19th- and early 20th-century hands, later entries appear sporadically across the second half of the manuscript, with 19th-century newspaper cuttings relating to household management and cookery pasted in at either end, later additions on loose pages tipped in. Binding of roan-backed boards (worn; spine and upper cover loose at top).

Provenance: (1) ‘L.E.B’ ; annotation on the lower cover in a 19th-century hand. (2) Albert Roux (1935-2021); his ex-libris pasted inside the upper cover.

A collection of recipes from the 19th-century American kitchen and a witness to the way in which culinary and domestic knowledge was passed down through generations of American women. The first owner of this manuscript – presumably the same woman who pasted a cutting from an agricultural periodical, the Genesee Farmer, bearing a tip on ‘How to remove Grease Spots’ that appeared in print in 1833 – gathers together many popular 19th-century American recipes and preparations, including yellow pickles, tomato ketchup, ‘cheap and good Beer’, ‘Water Melon Sweetmeats’, waffles, gingerbread, Marlborough pie, and ice cream. A couple are rather intriguing – we might wonder why ‘Apology cake’ or a ‘Cheap Antidote for poison’ were thought necessary – but the majority are familiar favourites, with multiple recipes offered for loaf cake, nun’s cake (similar to pound cake) and, of course, muffins. Recipes added by later owners of the manuscript include ‘Indian cakes’, Georgia pudding, Union cake, seed cake, pepper pickles, buckwheat cakes and the rather exotic racahout.
